I was born in 1960 to parents who emigrated from Puglia, and since I was little, I've already found myself behind the counter of a small village tavern. It was way back in 1962 that my parents bought an inn complete with accomodation: the "Trattoria San Rocco". A warm and hospitable place that, over the years, transformed from a simple inn to a renowned restaurant, becoming a reference point for the most loyal. It was then in the 2000s that our historic family restaurant took on another guise and was transformed by me into a pastry shop with a café, bread, pizza…

It was during those years that I began my journey in the world of coffee; even before I could reach the controls of the machine, i found myself preparing coffee using an unstable wooden box, originally intended to contain beer. Since then, more than sixty years have passed and the memory of the tons of ground coffee and all the cups I have prepared has now faded.

The real qualitative leap it was thanks to a small Neapolitan roaster, a true coffee artisan, that with his blends and his teachings, made me discover a new world of flavors and aromas and that’s how I started to love my work even more. For over 20 years, his irreplaceable blend is the secret that we share only with our loyal customers. All of this to witness the fact that, despite the changes that the time brings, some things remain unchanged as the bond between the bartender and his coffee.

It is with this detailed and engaging story that Claudio, the owner of “La Brasserie”, a historical place in Malnate in the province of Varese, tell us his story and that of his local.
