Damusdama is a space that recently opened in Settimo di Pescantina, in the province of Verona, so we took the opportunity to talk to Mauro, the owner, who has been using the Pro-Fondi knock box in his restaurant in Sant’Ambrogio di Valpolicella for nine years and decided to purchase it for the new business as well.

What reasons prompted you to buy Pro-Fondi in the newly opened venue as well?

I have always hated, ever since I was a child, the loud and annoying noise made by the barista to clean the knock box: I promised myself that if I ever opened a coffee shop, I would never want to hear it. Do you think it is a worthwhile investment?

In Settimo di Pescantina, I renovated a space that had been closed since 2017, in dilapidated condition. The expense, however, is worth all the money, as the portafilter cleaning machine has a constant, long-lasting benefit and brings with it numerous physical benefits as well.

Hygiene in the workplace is crucial: do you feel, Mauro, that Pro-Fondi contributes to maintaining a clean environment?

As far as I am concerned, hygiene is the basis of everything, and keeping the counter clean is a moral duty for the bartender. So much so that, even before the pandemic, we decided to use automatic cash machines in our establishment so that we do not touch money with our hands. The automatic portafilter cleaner is a guarantee of daily hygiene and safety in the workplace, and I always recommend it to anyone who asks me for information and opinions!
